Chicken Fried Rice

Like all fried rice dishes, Chicken Fried Rice tastes best when using leftover cooked rice.

Ingredients:

2 Tbsp vegetable oil
1 cup purple onion, sliced
1/2 cup your favorite fresh or frozen vegetables,
cut (corn, carrots, peas)
2 cup cooked Thai Kitchen Jasmine Rice
(cooled at least 1 hour or refrigerated leftover rice)
1 Tbsp sugar
1 to 2 Tbsp Thai Kitchen Premium Fish Sauce
1 tsp water
3/4 cup cooked chicken, shredded
1/4 cup green onions, chopped
Garnish: fresh cilantro and lime wedges

Directions:

Heat oil in a wok or large skillet. Over medium heat, cook onion and vegetables until tender.
Add rice, sugar, fish sauce and water. Stir-fry for 2 to 3 minutes until rice is cooked.
Stir in chicken and green onions. Serve with cilantro and lime wedges as garnish.
