Ingredients:
4 chicken breasts (1 lb.), boneless, skinless, cooked
4 shallots, thinly sliced
1/4 cup green onions, thinly sliced
1/2 cup mint leaves, chopped
1/2 cup fresh cilantro, chopped
1/2 head of lettuce, chopped
Dressing:
1/2 cup fresh lime juice
1/4 cup Thai Kitchen Premium Fish Sauce
2-4 Tbsp Thai Kitchen Red Chili Dipping Sauce
Directions:
Coarsely chop cooked chicken.
In a bowl, combine chicken, shallots, green onions, mint, cilantro and lettuce; toss lightly.
For the dressing, combine lime juice, fish sauce and red chili dipping sauce to taste; mix well.
Pour the dressing over chicken mixture and toss lightly to mix.
