Ingredients:

2 Cups Cold Water or Chicken Broth
1 to 2 Egg(s)
To Taste:
1 Tablespoon Soy Sauce (to taste)
1/2 Teaspoon Ground Cumin (to taste)
1/2 Teaspoon Ground Coriander (to taste)
1/2 Teaspoon Curry Powder or Ground Curry Spices (to taste)
1/2 Teaspoon Ground Ginger or Galangal (to taste)
Optional:
1/2 Cup Sweet Corn
1/2 Cup Sweet Peas
1/2 Cup Diced Carrot
1/2 Cup Other Vegetables Diced in Small Peices
For Garnish:
1 Diced Green Onion
1 Tablespoon Sesame Seeds
1/2 Teaspoon Grated White Pepper
1 Tablespoon Fresh Cilantro Leaves
1 Tablespoon Fresh Parsley Leaves
4 Fresh Kafir Lime Leaves
4 Freshly Cut Lime Wedges

Directions:
Whisk the egg(s) in a bowl and set aside. On a small plate, mix the cumin, coriander, curry spices, ginger, and other optional seasonings to create a yellow thai curry mixture and set it aside. Heat the water or Chicken Broth in a saucepan large enough to hold all ingredients. Immediately add spices, Soy Sauce, and other flavorings to the water/chicken broth and stir. Once the water/chicken broth comes to a boil with the flavorings in it, add the whisked egg. Stir the mixture together and cook for approximately 2 minutes. Transfer the soup to individual bowls and garnish with the desired ingredients (sesame seeds, white pepper, green onion, etc...). Serve Imediately. This recipe serves 4 - 6. Enjoy!
